Sugar beets are a significant cash crop in over 15 Idaho counties including Minidoka, Cassia and Canyon. The third largest crop in the state, most sugar beets are processed within Idaho's boundaries.

On average 14 million 100-lb bags of refined sugar are produced each year. The first sugar beet processing factories were built in Idaho Falls in 1903; Sugar City in 1904; Blackfoot in 1904; and Nampa in 1906.
